Afternoon!!

So, today, after I hit the gym for an hour, I went to the store and bought asparagus. I don't know about you, but when done properly, I heart asparagus. It's delicious. Soft and crunchy, lots of flavor; how can you go wrong?

Though I know many people who don't like them. Namely, my mom. But I just decided she could suffer for today. I had to do cardio for an hour, she can eat an asparagus salad.

Now, the recipe calls for soft boiled eggs. I will never ever again make soft boiled eggs.
Peeling them is one of the most harrowing experiences of my life. Maybe that was a bit exaggerated, but it's awful. So by the second egg that fell apart, I put the rest of them back in the pot and boiled it all the way home.

The recipe also calls for bacon bits and to put the eggs in the bacon grease. Well, since I'm trying to lose weight and not gain thunder thighs, I used smoked turkey, instead. It was pretty good, but to really get the flavor that would have been present for the bacon, I used cajun turkey.

The vinaigrette was part raspberry vinegar, olive oil, and dijon mustard. This vinaigrette held its own. I will DEFINITELY make that again. For just about every salad I make.

I also added grape tomatoes, because I absolutely adore grape tomatoes. Pretty much the only tomato I eat. If you see anything on this blog and would like to have the recipe, just comment and I'll get it to you!

For the rest of the day, meeting my friend Fred for coffee, and shoe shopping.

Not too shabby, 2012. So far, so good.
