Mascarpone Artichoke Lasagna

I'm usually more adventurous in my food choices when eating out.
Generally, the kitchen is a meat and potatoes kind of place.
But not today!!

Now, pasta is pretty easy to make. But let's make it a bit more interesting.

I had a can of mascarpone cheese in my fridge and decided to find a pasta that included that cheese.  As well as any other kind of cheese. Cause there are two ways to my heart: cheese and chocolate.


 Artichokes and peppers make up the vegetable portion of this lasagna. We added some tomato sauce as well, since it wasn't in the recipe.


Start layering the lasagna

So with the cheese layer, I had mascarpone, some parmesan, and some shredded cheese we had in the fridge. Pick and choose your favorites!

Lasagna is pretty easy to make, but this specific recipe had us using just about every pan we have. Cook your chicken first and make sure it's a big enough pan and then just add your vegetables. Little less clean up and only one pan to keep your eye on.

  1. well i *wanted* to join your blog, and pester you for recipes, and generally be a cousinly nuisance... BUT GFC isn't working. could be me, could be you =P This lasagna looks amazing, but my husband would *never* eat it.

  2. Come on Jasper!!!! It's sooo good.
    Recipe:
    3 bone-out chicken breasts
    2 peppers sauteed with 2 8oz cans of artichoke hearts
    Melt your cheeses (8oz mascarpone, 1/2 cup of parmesan) with a tblspoon of butter.

    Layer each one with noodles on the bottom as well as some tomato sauce.

    Bake at 450 for 15 minutes et voila!! Easy!

    If you want any of the other recipes, just ask, and no prob! Hope you're doin well cuz!

  3. Looks delicious, just add salad! You can tell who's cooking (and the Mother of who's cooking)you girls LOVE a cracker!! Next time, you might add a drained box of chopped spinach to your mascarpone & parmesan and then the salad is already included. Love seeing you in the Kitchen!!!! This looks like a keeper, too!
